November in Suffolk

Autumnal goodness from Head Chef Sam Hanison
It’s been a warm end to the summer season and we have benefited from a late supply of fruit and vegetables normally well out of season by now. Late into October and we were still getting tomatoes, soft herbs and summer salad leaves from Charlie’s small holding in Norfolk and other local suppliers.
Deliveries are starting to look a bit more autumnal now. Lots of squashes and pumpkins coming in, along with some lovely old English apples and fantastic looking quince grown by our friend Hugh also just over the border in Norfolk.
This gives Head Chef Sam plenty to play with when creating his menu for November. The seasonal produce featuring this month will include Deben river mussels, Lowestoft landed cod and Southwold soles. Apples, pumpkins, turnips, Florence fennel, beetroot, pears, quince and wild mushrooms to name but a few of autumn’s treats on the order sheets.
We are also close to game season and should start to see local venison and pheasant becoming available with partridges already finding their way into Sam's pot.

Roast Partridge with Pink Fir Apple potatoes, garlic fried puffball, roast celeriac, bread sauce and blackberry gravy
Roast mixed local squash, beetroot, turnip, marinated White Lady cheese and popped chickpea salad and lovage oil
Roast loin of Lowestoft cod with Spartan apple, Jerusalem artichoke and potato salad, braised fennel and wilted chard
Rabbit, red wine and brown lentil stew with creamy mash potato, roast quince, leek gratin and rich gravy
